1 cup oatmeal made with vanilla almond milk
1 tbsp natural peanut butter (Trader Joe’s is the BEST I have found anywhere)
No Yolks Egg Noodles (which are not completely vegan–they have use egg whites) with zucchini and onion stir fry on top
I was not hungry at all and didn’t eat much of my lunch.
1 slice oatmeal bread with a small smear of peanut butter
Went to the gym and ran/walked on the treadmill for 30 minutes and rode on the elliptical bike for 20 minutes.
Pad Thai with tofu (I hated the tofu and picked it out)
Vegetable egg rolls (again, not vegan–this was my splurge for the week)

Everyone talks about how much more energy they have when eating vegan. I had been thinking that I wasn’t noticing much of a difference. However, last night about 10pm I started feeling so sleepy. I was reading and couldn’t keep my eyes open. I didn’t know why I was so tired! Then I remembered that I had worked the night before and had only slept TWO hours that morning! I had totally forgotten to take another nap in the afternoon! Wow…me forget to take a nap?! That’s unheard of!
I have also noticed that my skin is looking so much better. The bumps on my chin (that rarely ever go completely away) are almost gone and the skin on my forehead is not as oily as it usually it. My face has not been dry (although my arms have been very dry this week).
And last night my hubby said, “Have you lost more weight? Because you look smaller.” I love him! And yes, I have lost some weight this week but I’ll wait until Sunday to share how much!
