Vegan Challenge Day 8 (Week 2 Starts)

Breakfast
Oatmeal bread with peanut butter
1/2 an orange

Went to the gym and did a 5K on the treadmill followed by about 20 minutes of weight training.

Lunch
Leftover veggie stir fry and brown rice and a sprinkle of chopped cashews

Snack
Lara Bar (pecan pie flavor)

Supper
I splurged.  We went out with my parents to Cheddar’s (my FAVE)
Portabello on a Ciabatta roll (I held the mayo but allowed the cheese)
French fries (like I said, I splurged!)
Unsweet tea
Shot glass of key lime pie (with whipped cream)

It was all soooo good!  I loved having a splurge meal that was still nutritious and meat free (but not vegan or course because of the cheese and whipped cream).  I will definitely be making portabello burgers at home soon!
