Vegan Challenge

Vegan Challenge: Day 12

I have a confession since my last post.  I’ve eaten three Cheetos puffs, three bites of chicken salad (one of my favorites) and a small handful of M&Ms.  And a McDonald’s vanilla ice cream cone.  EEK!  Yes, I had some non-vegan treats today.  But I didn’t go overboard and my meals were all healthy and reasonable today!

Today was not my best day–I had no veggies (unless you count avacado in some guacamole!).

Aaron told me last night that he had told someone that he thought I’d only last about 48 hours on a vegan diet.  He’s been very surprised!  And he admitted that he hasn’t starved.  I’ve even made chicken for the rest of the family and have bought them hamburger.  I’ve noticed that Madalyn and Layla have both been eating healthy snacks (since that’s all we have) and Aaron even tried a Snapea Crisp last night.  I couldn’t believe it!

I got up before the girls today to get a workout in because I knew we wouldn’t have time to get to the gym.  I did a DVD that was mostly cardio with a little bit of strength training at the end.

Breakfast
Oatmeal made with vanilla almond milk with a little honey, a banana and some walnuts (it was delicious!)

Lunch
Homemade potato “fries” with ketchup–I wasn’t very hungry

Snack
McDonald’s ice cream cone (the girls had a doctor’s appointment so I treated them…and myself since I was the one who had to hold Layla down for her blood test!)


Supper 
half an ear of corn
Wholly Moley guacamole (as mentioned on the Biggest Loser–I found it at Walmart) and three baked until crispy corn tortillas
a lot of grapes

Snacks
I also had some oat bran sesame seed crisps and the before mentioned treats.
